This book bundles the pieces that Arjan den Boer wrote about the disappearing catering industry for DUIC, supplemented with extra images such as menus and advertisements. Using historical sources such as newspaper reports, he describes the history of 25 well-known businesses, with special attention to the building and the interior. Ton van den Berg added another 25 to these stories, written on the basis of conversations with former owners and memories of customers. They often also had pictures. The personal stories and the more factual pieces together provide a richly varied picture of the Utrecht hospitality industry in the 20th century.
